There is a balance between technology and history. When it comes to grape growing and wine making, history is the core of our approach.
For Adelante Malbec, we start with nature. We incorporate nature and traditional methods, while using improvements such as temperature control in the winery and organic farming methods to preserve and extend the health of our 78 year vineyard.
We did not start with a price point or a specific style to make a wine that fits the market. We started with the desire to find the true level of our vineyard. We strive to find the correct yields and grow grapes to make the best wine possible. We are always going forward, turning the grapes from our vineyard into wine for your table, family, friends, and enjoyment. Adelante!
The small La Consulta vineyard is organically farmed on self-rooted 78-year old vines. Following variations in soil compositiwon and water retention, we have divided the vineyard into north, center, and south sections, mixing Guyot and Cordon trellising varies by section.
To reach our goal of 13.5% alcohol, we green harvest to control the yields and to mature the grapes early. The grapes are handpicked into small bins, and handled gently at the winery. The grapes are sorted first in the vineyard and twice more at the winery with an attention to detail is rare in this price range.
Since we believe in the adage that wine is made in the vineyard, intervention at the winery is kept to a minimum, The grapes are fermented separately by section. We do a cold soak for three days, use native yeast, and follow with natural malolactic fermentation at a moderate temperature. Upon completion of malolactic fermentation, we add a minimal amount of SO2 to avoid bacterial spoilage, and then age for twelve to eighteen months—60% in French oak barrels (1/3 new, 2/3 old) in 40% in small stainless steel tanks. We do a final blend before bottling to confirm each vintage of Adelante maintains consistency.
We aim for balance over power, along with concentration that stands up to and compliments a wide a wide array of foods: meat dishes, pastas, and Mediterranean fare.
